Fresh red peppers contain more than seven times the amount of vitamin C compared with oranges,
however, the drying technique used to prepare the spice destroys much of its vitamin C content. It
does, however, provide high levels of vitamin A. One tablespoon of paprika contains 68 percent of
the recommended daily amount of vitamin A, or 3400 IU and 50 percent of the recommended amount
of vitamin B-6, or 1 mg.
